The Lunar New Year, also known as the Spring Festival, is a momentous holiday observed across East and Southeast Asia. Whether referred to as Chunjie in China, Têt in Vietnam, Seollal in South Korea, or Losar in Tibet, the celebration follows the lunisolar calendar, beginning with the first new moon and culminating with the arrival of the full moon. Central to these festivities is the theme of returning home to share a grand reunion feast with family. Among the many delicacies served during this time, vegetable spring rolls stand out as a symbolic and flavorful favorite.

Essential Ingredients and Preparations

Creating authentic spring rolls requires a balance of fresh vegetables and savory seasonings. For the filling, you will need half a head of cabbage, two peeled carrots, two stalks of trimmed celery, and one onion—all finely julienned into matchstick-sized pieces. To provide a rich aromatic base, prepare three cloves of minced garlic.

The seasoning profile relies on a blend of savory and aromatic elements: one tablespoon of oyster sauce, a teaspoon each of sesame oil and garlic powder, a quarter-teaspoon of kosher salt, a teaspoon of black pepper, and several dashes of ground white pepper. For assembly, have a package of spring roll wrappers and one lightly beaten egg ready to serve as a sealant.

Mastering the Filling and Texture

The secret to a superior spring roll lies in the moisture content of the filling. Begin by heating a tablespoon of oil in a wok or skillet over high heat. Sauté the minced garlic for about two minutes until it reaches a fragrant, golden-brown state. Incorporate the julienned vegetables and cook over medium heat for several minutes until they begin to wilt. Once the vegetables are slightly softened, stir in the oyster sauce, salt, sesame oil, and various peppers.

Continue cooking the mixture over medium-high heat for approximately five to ten minutes. It is vital to ensure that all liquid has evaporated from the bottom of the wok; a wet filling will inevitably result in a soggy, compromised wrapper. Once the moisture is gone and the vegetables are soft, spread the mixture onto a metal baking pan to cool completely. Propping the pan at a slight angle during this stage allows any residual liquid to drain away, which should be discarded.

Assembly and Frying Techniques

Proper rolling technique is essential for both aesthetics and safety. Place a wrapper on a flat surface in a diamond orientation. Position two tablespoons of the cooled filling near the corner closest to you. As you roll, ensure the wrap is tight to eliminate air pockets, which can cause the rolls to burst when they hit the hot oil. Fold the side corners toward the center and continue rolling, sealing the final edge with a small amount of egg wash. While working, keep the remaining wrappers covered with damp paper towels to prevent them from becoming brittle.

To achieve the perfect crunch, fill a deep pot with two to four inches of oil and heat it to 350°F. Since the vegetable interior is already cooked, the frying process is brief. Submerge the rolls until they reach a deep golden brown, then carefully remove them and place them on paper towels to drain excess oil. These crispy treats are best enjoyed warm, ideally accompanied by a side of sweet chili sauce for dipping.
